Our choice of protein for this dish is ground chicken, but you can certainly substitute ground turkey, diced chicken thighs, or breasts. Seasoned with coriander, garlic, and cumin, the chicken takes on a savory flavor profile that is not only delicious but helpful to your digestive process. Coriander and cumin are two common spices in the Ayurvedic kitchen and both inhabit properties that ease and assist your body through digestion. We think the spice combination pairs well with the star of the show – the sauce. The sauce for these ground chicken lettuce wraps combines our Maple Walnut Ghee-nut butter with lemon and dill to bring every element of the dish together. It really is what makes them so addictive and satisfying. The sauce includes 1/3 cup water for the baseline consistency, but if  the sauce appears too thick for your liking, add more water 1 TBSP at a time.

Maple Walnut Chicken Lettuce Wraps
Ingredients
  • 1 lb Ground turkey or chicken
  • 1 tsp Coriander, ground
  • 1 tsp cumin, ground
  • 1 clove Garlic, minced
  • 1 tbsp ghee
  • 1/4 cup Maple walnut butter
  • 1 tbsp dill, chopped
  • 1 small red Onion, sliced (soak in water to reduce bite)
  • 2 Lemons, or 1/4 cup juice
  • 1 Cucumber, thinly sliced
  • 1 head butter lettuce
  • Salt
  • Pepper
Directions

1. Combine turkey/chicken, coriander, cumin, garlic and 1 tsp salt in a bowl. Mix well. Heat ghee in a medium pan over medium high heat. Add meat mixture and cook for 10-12 minutes until browned and cooked through.

2. Meanwhile, whisk together maple walnut butter, lemon juice, dill and 1/3 cup water. If the sauce appears thick, add more water 1 TBSP at a time.

3. Assemble lettuce wraps with turkey/chicken, onion and cucumber. Drizzle with sauce and enjoy!

4. Optional: bulk out recipe with 1 cup rice.
